Most national coverage of Houston stops at the James Beard winners and the Galleria steakhouses. That misses the point of eating here. The city's real depth lives in a Bellaire Boulevard strip center at 10 p.m., in a Pearland BBQ pit, in the Viet-Cajun boil joints that invented a cuisine that exists nowhere else.
